Buttermilk Oven-"Fried" Chicken

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Buttermilk Oven-“Fried” Chicken
6 large boneless, skinless chicken breasts              
2 cups buttermilk                                                   
Melted butter                                                        
½ cup flour                                                               
1/2 cup cornmeal
1 tsp salt
2 tsp paprika
1 tsp granulated garlic

Soak chick in milk in a large bowl.  Cover with plastic wrap and chill for 30 minutes. Spray a large baking dish or sheet with non-stick spray. Set aside. Preheat oven to 400 degrees. Brush butter over the bottom of the baking dish. Mix flour, cornmeal, salt, paprika and garlic together in large zipper-style plastic bag. Add one milk-soaked piece of chicken to the seasoned flour and shake well to dredge. Place the dredged chicken in the baking dish and repeat with remaining chicken and flour mixture. Bake the chicken for 10 minutes, turn it over and bake an additional 10 minutes or until cooked through.
