Buttermilk Oven-“Fried” Chicken
Ingredients:
- 6 large boneless, skinless chicken breasts
- 2 cups buttermilk
- Melted butter
- ½ cup flour
- 1/2 cup cornmeal
- 1 tsp salt
- 2 tsp paprika
- 1 tsp granulated garlic
Directions:
- Soak chicken in milk in a large bowl. Cover with plastic wrap and chill for 30 minutes.
- Spray a large baking dish or sheet with non-stick spray. Set aside.
- Preheat oven to 400 degrees.
- Brush butter over the bottom of the baking dish.
- Mix flour, cornmeal, salt, paprika and garlic together in large zipper-style plastic bag.
- Add one milk-soaked piece of chicken to the seasoned flour and shake well to dredge.
- Place the dredged chicken in the baking dish and repeat with remaining chicken and flour mixture.
- Bake the chicken for 10 minutes, turn it over and bake an additional 10 minutes or until cooked through.
