Cinnamon Streusel Quick Bread
Ingredients:
- 1 box cinnamon streusel muffin mix
- 1/3 cup flour
- ½ cup water
- 1/3 cup vegetable oil
- 2 eggs
Directions:
- Heat oven to 375 degrees.
- Grease bottom of 9x5 loaf pan.
- In medium bowl, stir muffin mix (Betty Crocker), ½ of the streusel packet, flour, water, oil and eggs just until blended (batter may be lumpy).
- Spread batter in pan. Sprinkle with remaining streusel mix.
- Bake 38-43 minutes, or until top is golden brown and springs back when lightly touched. Cool 15 minutes. Run knife around edges of pan before removing; remove from pan. Cool completely before slicing, about 45 minutes. A toothpick inserted in the middle comes out clean pretty easily, so I suggest baking for at least 35 minutes to make sure the middle is done.
