Cinnamon Streusel Quick Bread

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Cinnamon Streusel Quick Bread
1 box cinnamon streusel muffin mix                     
1/3 cup flour                                                           
½ cup water
1/3 cup vegetable oil
2 eggs

Heat oven to 375 degrees.  Grease bottom of 9x5 loaf pan.  In medium bowl, stir muffin mix (Betty Crocker), ½ of the streusel packet, flour, water, oil and eggs just until blended (batter may be lumpy).  Spread batter in pan.  Sprinkle with remaining streusel mix.  Bake 38-43 minutes, or until top is golden brown and springs back when lightly touched.  Cool 15 minutes. Run knife around edges of pan before removing; remove from pan.  Cool completely before slicing, about 45 minutes.  A toothpick inserted in the middle comes out clean pretty easily, so I suggest baking for at least 35 minutes to make sure the middle is done.
