Parmesan Chicken

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Parmesan Chicken
2 Tbl. chopped dill                                        
2 cups cornflake crumbs                            
¾ cups freshly grated parmesan cheese
1 small pkg ranch dressing mix
8 boneless, skinless chicken breast halves
2 slightly beaten egg whites

Heat oven to 375 degrees.  Coat baking dish with non-stick spray.  In a shallow dish, mix together dill, cornflake crumbs, parmesan cheese and ranch mix.  Have egg whites in a separate dish.  Dip chicken first in egg whites, then coat in cornflake mixture.  Bake for 18-20 minutes or until coating is crisp and chicken is no longer pink.

*I used the pre-crushed cornflake crumbs because they are finer, coat more evenly, and stick to the chicken better… but you could crush your own cornflakes if you want to.
