For William's birthday, he went through my cookbooks and picked some recipes for us to try. One recipe was for double-fudge brownies, and they were excellent!
Double-Fudge Brownies
Ingredients:
- 1 cup (135 g) flour, sifted
- 1/2 cup (60 g) unsweetened dark cocoa powder, sifted
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups (400 g) granulated sugar
- 1 cup/2 sticks butter, melted and cooled
- 2 tsp vanilla
- 4 eggs (room temperature)
- 1 cup (180 g) semisweet chocolate chips
Directions:
- Preheat oven to 325 degrees. Grease a 9x13 pan with nonstick spray, then line with parchment paper, leaving overhang on the sides.
- In a small bowl, sift and whisk together flour, cocoa, baking powder, and salt.
- In a large mixing bowl, beat together sugar, melted butter, and vanilla until creamy.
- Then add eggs one at a time until fully incorporated.
- Add flour mixture a third at a time, mixing until just incorporated.
- Fold in chocolate chips.
- Pour batter into prepared pan, spreading out evenly.
- Bake for 25-30 minutes, or until tester inserted into the center comes out slightly wet with a few moist crumbs.
- Let cool completely in pan set on wire rack before removing from pan and cutting.
