In an attempt to eat more veggies and find new ways to make them, I came across this roasted carrot recipe. They are super easy and great to bulk up a meal with something healthy. Enjoy!
Ingredients:
- Carrots, cut into even-sized sticks, enough to fill a sheet pan in a single layer
- 1-2 Tbl olive oil
- 1 tsp garlic powder
- 1 tsp dried dill
- 1 tsp black pepper
- salt to taste
Directions:
- Toss carrots in the above ingredients to coat and then spread out into a single layer on a baking sheet and bake for 22-35 minutes at 400 degrees, or until fork tender.
For Dip, combine the following:
- 1/2 cup plain Greek yogurt
- 1 Tbl smoked paprika (or to taste)
- 1 Tbl olive oil
- 1 Tbl water
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- salt to taste
For easy clean-up, line your baking sheet with foil, parchment paper or a non-stick liner.
