At our annual New Year's family party, everyone seemed to really like a new Chex Mix recipe that we tried out. I thought you might like to have a copy of it. The picture is from the Chex website.
Honey-Roasted Chex Mix
Ingredients:
- 3 cups honey nut Chex or corn Chex cereal
- 2 cups Cheerios cereal
- 1 1/2 cups Bugles original corn snacks
- 1 cup small pretzel twists
- 1/2 cup honey-roasted peanuts
- 2 Tbl. light corn syrup
- 2 Tbl. honey
- 1 Tbl. butter
- 1/2 tsp. vanilla
Directions:
- Heat oven to 325 degrees. In very large bowl, mix cereals, corn snacks, pretzels and peanuts.
- In 1-quart saucepan, heat corn syrup, honey and butter to boiling over medium heat, stirring occasionally. Remove from heat; stir in vanilla. Pour over cereal mixture; stir until evenly coated. Spread in ungreased 15x10x1-inch pan.*
- Bake 20 minutes; stirring after 10 minutes. Spread on waxed paper or foil to cool, about 15 minutes. Break into bite-sized pieces. Store in airtight container.
- *A 13x9-inch pan can be used instead. Bake 24 minutes, stirring after 12.
Marsha's Notes:
It says to break into bite sized pieces, but when we made it, it didn't clump up like that. We also used honey-nut Cheerios instead of the regular ones, because honey-nut seems to be the theme here.
