BBQ Potatoes
4 medium red potatoes, cut into cubes
1 Tbl. oil
2 Tbl barbecue dry seasoning
1 large onion, cut up (opt)
Toss potatoes with oil in large bowl. Add seasoning, toss to
coat evenly. Place potatoes on large,
wide sheet of heavy duty aluminum foil sprayed with non-stick spray. Place onions evenly on top of potatoes. Bring up foil sides; double fold top and ends
to tightly seal packet. Bake at 400-425
degrees for 45-60 minutes, or until potatoes are tender, turning halfway
through cooking time. You can also mix
things up by adding cheese and Mrs. Dash garlic and herb seasoning instead of
the barbecue.
