Paraguayan Cheesy Rice
Ingredients:
- 2 cups rice (not instant)
- 2 tsp. salt
- 6 cups hot water
- 4 hotdogs, cut into pieces
- 2 cups cut baby carrots, 1/4 inch pieces
- 2 cups shredded Munster cheese
- oil
Directions:
- In a large pot, pour enough oil to coat the bottom of the pan, and place on the stove on medium-high heat. Add rice and sauté until golden brown.
- Add water, hotdogs, carrots, and salt. Bring to a boil.
- Reduce heat, cover the pot and let simmer for about 30 minutes. Rice is done when all water is absorbed into it.
- Stir in cheese and serve.
- Side Note: Paraguayans eat a lot of hotdog buns as their “rolls” with their meal because they are cheap, so Scott always has us eat a hotdog bun on the side with our cheesy rice.
