Paraguayan Cheesy Rice

Scott made this on his mission to Paraguay, but it isn’t exactly something that Paraguayans are famous for eating. 


Paraguayan Cheesy Rice
Ingredients:
  • 2 cups rice (not instant)
  • 2 tsp. salt
  • 6 cups hot water
  • 4 hotdogs, cut into pieces
  • 2 cups cut baby carrots, 1/4 inch pieces
  • 2 cups shredded Munster cheese
  • oil
Directions:
  1. In a large pot, pour enough oil to coat the bottom of the pan, and place on the stove on medium-high heat.  Add rice and sauté until golden brown.  
  2. Add water, hotdogs, carrots, and salt.  Bring to a boil.  
  3. Reduce heat, cover the pot and let simmer for about 30 minutes.  Rice is done when all water is absorbed into it.
  4. Stir in cheese and serve.
  5. Side Note: Paraguayans eat a lot of hotdog buns as their “rolls” with their meal because they are cheap, so Scott always has us eat a hotdog bun on the side with our cheesy rice.
