Parmesan Chicken
Ingredients:
- 2 Tbl. chopped dill
- 2 cups cornflake crumbs
- ¾ cups freshly grated parmesan cheese
- 1 small pkg ranch dressing mix
- 8 boneless, skinless chicken breast halves
- 2 slightly beaten egg whites
Directions:
- Heat oven to 375 degrees. Coat baking dish with non-stick spray.
- In a shallow dish, mix together dill, cornflake crumbs, parmesan cheese and ranch mix.
- Have egg whites in a separate dish.
- Dip chicken first in egg whites, then coat in cornflake mixture.
- Bake for 18-20 minutes or until coating is crisp and chicken is no longer pink.
Marsha's Notes:
I used the pre-crushed cornflake crumbs because they are finer, coat more evenly, and stick to the chicken better… but you could crush your own cornflakes if you want to.
