Parmesan Chicken

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Parmesan Chicken
Ingredients:
  • 2 Tbl. chopped dill
  • 2 cups cornflake crumbs
  • ¾ cups freshly grated parmesan cheese
  • 1 small pkg ranch dressing mix
  • 8 boneless, skinless chicken breast halves
  • 2 slightly beaten egg whites
Directions:
  1. Heat oven to 375 degrees.  Coat baking dish with non-stick spray.  
  2. In a shallow dish, mix together dill, cornflake crumbs, parmesan cheese and ranch mix.  
  3. Have egg whites in a separate dish.  
  4. Dip chicken first in egg whites, then coat in cornflake mixture.  
  5. Bake for 18-20 minutes or until coating is crisp and chicken is no longer pink.
Marsha's Notes:
I used the pre-crushed cornflake crumbs because they are finer, coat more evenly, and stick to the chicken better… but you could crush your own cornflakes if you want to.
