Peppermint Hot Chocolate

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Peppermint Hot Chocolate
Ingredient:
  • 1 ½ cups heavy cream
  • 1 ½ cups milk
  • ¼ cup sugar
  • 1/8 tsp. salt
  • 4-6 oz semisweet baking chocolate bars, chopped
  • 3 drops peppermint extract
  • Sweetened whipped cream 
Directions:
  1. In a saucepan, combine the cream, milk, sugar and salt.  
  2. Heat over medium-low heat.  
  3. When the cream mixture just begins to steam, add the chopped chocolate and stir until melted.  
  4. Stir in the peppermint extract/oil.  
  5. Divide the hot chocolate among mugs and top with whipped cream and chocolate shavings for garnish if desired.  Makes about 4 mugs and is very rich.
