Three-Cheese Spirals

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Three-Cheese Spirals
Ingredients:
  • 1 pkg. (16 oz.) spiral pasta
  • 1 egg
  • 1 ½ cups (12 oz.) sour cream
  • 1 1/2 cups (12 oz) cottage cheese
  • 1 lb Velveeta cheese, cubed
  • 2 cups (8 oz) shredded cheddar cheese 
Directions:
  1. Cook pasta according to package directions.  
  2. Meanwhile, in a blender, combine the egg, sour cream, and cottage cheese; cover and process until smooth.  
  3. Transfer to a large bowl; add process and cheddar cheeses.  
  4. Drain the pasta; stir into cheese mixture until evenly coated.  
  5. Transfer to a greased, shallow 3 qt. baking dish.  
  6. Bake, uncovered at 350 degrees for 15 minutes; stir.  Bake 15-20 minutes longer or until bubbly and edges begin to brown.  Top with a handful of shredded cheese.  If not creamy enough, stir in a little bit of milk.
