Waffles

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Waffles
1 ¾ cups flour                                                
1 Tbl. Baking powder                                             
¼ tsp. salt                                                               
2 eggs
1 3/4 cups milk
1/2 cup oil
1 Tbl sugar (opt)

In a medium mixing bowl, stir together flour, baking powder, and salt.  Make a well in the center of dry mixture; set aside.  In another bowl, beat eggs slightly.  Beat in milk and oil.  Add egg mixture to dry mixture.  Stir just until moistened (batter should be lumpy).  Pour 1 to 1 ¼ cups batter onto grids of a preheated, lightly greased waffle baker.  Close lid quickly and do not open until done.  Bake according to waffle iron directions.
