Waffles

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Waffles
Ingredients:
  • 1 ¾ cups flour
  • 1 Tbl. Baking powder
  • ¼ tsp. salt
  • 2 eggs
  • 1 3/4 cups milk
  • 1/2 cup oil
  • 1 Tbl sugar (opt)
Directions:
  1. In a medium mixing bowl, stir together flour, baking powder, and salt.  
  2. Make a well in the center of dry mixture; set aside.  
  3. In another bowl, beat eggs slightly.  Beat in milk and oil.  
  4. Add egg mixture to dry mixture.  Stir just until moistened (batter should be lumpy).  
  5. Pour 1 to 1 ¼ cups batter onto grids of a preheated, lightly greased waffle baker.  Close lid quickly and do not open until done.  Bake according to waffle iron directions.
