"Way Good" Granola

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!



“Way Good” Granola
8 cups oatmeal 
1 cup white or wheat flour 
½ cup coconut (opt.)
1 ½ cup brown sugar
1/3 cup oil
1/3 cup water
1/3 cup apple juice concentrate
1 Tbl vanilla

Mix oatmeal, flour and coconut together.  In a separate bowl mix brown sugar, oil, water, apple juice and vanilla.  Pour over oatmeal mixture and stir well.  Spread granola out on two cookie sheets evenly.  Place both sheets in the oven at the same time (on different racks) and bake for 30 minutes at 300 degrees.  Stir granola and bake for another 15-20 minutes.  You can also add dried fruit, nuts, chocolate chips, etc. for variety.
