“Way Good” Granola
Ingredients:
- 8 cups oatmeal
- 1 cup white or wheat flour
- ½ cup coconut (opt.)
- 1 ½ cup brown sugar
- 1/3 cup oil
- 1/3 cup water
- 1/3 cup apple juice concentrate
- 1 Tbl vanilla
Directions:
- Mix oatmeal, flour and coconut together.
- In a separate bowl mix brown sugar, oil, water, apple juice and vanilla.
- Pour over oatmeal mixture and stir well.
- Spread granola out on two cookie sheets evenly.
- Place both sheets in the oven at the same time (on different racks) and bake for 30 minutes at 300 degrees.
- Stir granola and bake for another 15-20 minutes. You can also add dried fruit, nuts, chocolate chips, etc. for variety.
