Breakfast Sausage Balls

I have seen a few variations on this recipe, so I figured I should try it. Everyone liked it, so I think it's a keeper.


Breakfast Sausage Balls

  • 2- 2 1/2 cups pancake mix, Bisquick, or Red Lobster Cheddar Bay Biscuit mix
  • 2 cups shredded cheddar cheese
  • 1 lb breakfast sausage
  • 1/4 cup milk

  1. Preheat oven to 350 degrees. 
  2. Mix together all ingredients until combined- you can use a stand-mixer with a paddle attachment, if you like... just be careful! Some of my pancake mix went flying when I turned on the mixer. 
  3. Make into 1-1 1/2 inch balls (can use a medium cookie scoop to portion and then roll the balls in your hands to make smooth) and place on a lined/greased baking pan. You can place them close together because they don't spread and the entire batch should fit on a single cookie sheet.
  4. Bake at 350 degrees for 20-23 minutes or until they reach an internal temperature of 160-170 degrees.

Notes: Rumor has it that these are great to make ahead of time and then freeze to pull out later for a quick breakfast in the microwave. You can serve them with syrup, jam, or even savory sauces. Chris liked fry sauce and another site recommended a remoulade sauce. We used maple sausage, but you can change up the flavors by using any kind of ground sausage you like with different combinations of cheeses. Serve as a main item, side items or appetizer.
