Diet Friendly Breakfast Casserole or Burrito

I saw a lady on TikTok make these breakfast casserole dishes and I thought that looked simple, easy, and great for either eating as prepared or stuffed inside of tortilla for a burrito. With my new Rubbermaid Brilliance glass food storage containers, I can prep the casserole right in my dishes and pop in the oven for cooking.





Breakfast Casserole

Ingredients:

  • frozen breakfast hashbrown patty
  • Egg Beaters
  • breakfast meat/toppings of your choice
  • tortillas (if making a burrito)

Directions:

  1. Spray your baking dish with non-stick spray (I believe I used two of my two-cup Rubbermaid Brilliance container, which was perfect!).
  2. Place two hashbrown patties side by side in a baking dish.
  3. Pour 1/2 cup of Egg Beaters over your hashbrowns (or enough until they are covered). 
    • Or you can scramble two regular eggs if you aren't worried about the calories.
  4. Sprinkle over the top any of your desired toppings (shredded cheese, crumbled bacon or breakfast sausage, diced veggies of your choice, etc.).
  5. Bake in a 350 degree oven. My hashbrowns were frozen, so it took about 20 minutes until the eggs were completely cooked through, puffed up, browning on top and no longer runny. It might take more like 10 minutes (+) if your hashbrowns are thawed.
  6. Let cool slightly in container and then serve. 

Make it a burrito!:

If you are making it a burrito, for dieting I like to use a lower calorie/carb tortilla. Take half of one of your pans of casserole (or just one of the hashbrown patty sides) and place it on a tortilla and roll up. I made two pans, which in turn made four burritos (see the above pictures), so I rolled up three of them in paper towels and stuck them in the fridge for future meals. You could also place them in the freezer if you aren't going to eat them in the couple of days.

Marsha's Notes:

For one hashbrown patty, you are looking at about 100 calories. For the Egg Beaters and a mindful amount of toppings, another 100 calories, and then the diet-friendly tortilla was about another 100 calories, making each burrito about 300 calories.

As a casserole, if you eat the entire dish (both hashbrown patties, but no tortilla) you are still looking at about 300 calories.

If you don't have the Rubbermaid Brilliance containers, you can accomplish the same thing by using any baking dish you like that fits your hashbrown patties. I haven't tried it, but I am thinking you could fit 4-6 patties in a square baking dish.
