Caramel Apple-Topped Waffles

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Caramel Apple-Topped Waffles

tablespoons butter or margarine

medium eating apples, peeled and sliced (3 1/2 cups) 
1/4
cup caramel topping
2
cups Original Bisquick™ mix
1 1/3
cups milk 
2
tablespoons vegetable oil
1
egg, if desired

To make caramel apple topping, melt butter in skillet over medium heat. Stir in apples.  Cook about 3 minutes, stirring frequently, until tender.  Pour caramel topping over apples.  Heat, stirring frequently, until warm.  Keep warm.  Heat waffle iron; spray with non-stick spray.  Stir remaining ingredients until blended.  Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.  Bake about 5 minutes or until steaming stops.  Carefully remove waffle.  Serve with caramel apple topping.
