Home-Style Chicken Dinner

*This recipe is low-carb if you omit or sub the potatoes.

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!


Home-Style Chicken Dinner
4 tsp. dried basil leaves                                           
2 tsp. seasoned salt                                                  
2 tsp. garlic pepper blend                                        
4 Tbl. olive oil or vegetable oil                                
3-3 ½ lb. cut-up chicken, or chicken breast
6 small red potatoes, cut into 1/4's
*2 medium sweet potatoes, cubed
*1 medium green pepper, cut up
*3 roma tomatoes, cut into 1/4's

*I used baby carrots, red potatoes and yellow squash instead.  Use what veggies you like.

Heat oven to 400 degrees.  Spray a 9x13 glass baking dish with cooking spray.  In a large bowl, mix basil, seasoned salt, garlic pepper and oil.  Brush about half of the mixture on chicken.  Add remaining veggies to the bowl and toss to coat.  Place vegetables in baking dish.  Place chicken on vegetables.  Brush with any remaining oil mixture.  Bake covered in tin foil for 45-50 minutes, or until chicken is cooked through.  Then broil on high 5 more minutes with foil removed, or just until chicken top is browned nicely.
 *Swap the potatoes for another veggie for a low-carb option.
