Slow-Cooker Roast Beef

*This recipe is low-carb if you omit or sub the potatoes.

I found this recipe years ago and am now copying it here from our family cookbook binder. Enjoy!



Slow-Cooker Roast Beef
3 lb. sirloin tip roast               
½ cup flour                                                 
1 envelope dry onion soup mix
1 envelope brown gravy mix
2 cups ginger ale
mixed veggies, if desired  

Coat roast with flour (reserve remaining flour).  Place in slow cooker.  Add mixed veggies if desired (cut up potatoes, carrots, onions, etc.).  Combine soup mix, gravy mix, remaining flour and ginger ale in bowl.  Mix well.  Pour over roast (and veggies).  Cover.  Cook on low 8-10 hours.  This makes its own gravy!

*I also stirred my veggies around twice in the cooking process to make sure none of them were sticking out of the liquid.
