*This recipe is low-carb if you omit or sub the potatoes.
Slow-Cooker Roast Beef
Ingredients:
- 3 lb. sirloin tip roast
- ½ cup flour
- 1 envelope dry onion soup mix
- 1 envelope brown gravy mix
- 2 cups ginger ale
- mixed veggies, if desired
Directions:
- Coat roast with flour (reserve remaining flour).
- Place in slow cooker.
- Add mixed veggies if desired (cut up potatoes, carrots, onions, etc.).
- Combine soup mix, gravy mix, remaining flour and ginger ale in bowl. Mix well. Pour over roast (and veggies).
- Cover. Cook on low 8-10 hours. This makes its own gravy!

I also stirred my veggies around twice in the cooking process to make sure none of them were sticking out of the liquid.
