Always on the lookout for more salads, side dishes and thing that go well with BBQ, grilling or sandwiches. This recipe has "street corn vibes" and can be customized to your liking. While my recipe doesn't call for it, I have seen recipes that used chopped peppers, diced red onion, diced jalapenos, and chopped cilantro. You could add black beans, pinto beans, diced tomatoes (or a can of Rotel), sliced olives or even peas. You can also alter the flavor by using some of the fun Frito flavors like queso or BBQ.
Fritos Corn Salad
Ingredients:
- 3 cans of corn, drained
- shredded carrots
- 1 pkg bacon, chopped and cooked
- 2 cups shredded cheese
- 1 cup mayo
- 1/2 cup sour cream
- salt, pepper and Tajin
- squeeze of lime
Directions:
- Open and drain your corn.
- Add your corn to a large mixing bowl and top with your desired amount of shredded carrots (I probably used 1/2-1 cup), your bacon, cheese, mayo, sour cream and squeeze of lime.
- Stir everything together and season to taste with salt, pepper and tajin.
- Just before serving, stir in one bag of Fritos or serve the Fritos on the side to add to individual portions if you don't want leftovers getting soggy.
Marsha's Notes:
Tajin was not something I was super familiar with, but it's a chili lime seasoning, so if you have ever had anything chili lime flavored, then you will have an idea of what Tajin tastes like. It's not very hot and adds a lot of good flavor, but the lime/citrus kick is noticeable, and some people in my family don't like overly "sour" things, so I like to put the Tajin bottle on the table and add extra just to mine. If you don't have (or don't like) Tajin, you can also use some taco seasoning.
You can also serve this salad with the Fritos "Scoops" and use it more like a dip.
