This is another recipe that my husband has requested that we make every year for Christmas. It was so incredibly yummy, it was like eating dessert. We served our French toast with little smokies and scrambled eggs with cheese. So delicious!
Marsha's Stuffed Peach French Toast
1 cup brown sugar
½ cup butter
2 Tbl. water
1 (29 oz) can sliced peaches or two smaller cans
5 eggs
1 ½ cup milk
1 Tbl. vanilla
1 tsp. cinnamon
2 Tbl. sugar
1 loaf French bread, cut into 18 slices
8 oz. cream cheese, softened
1/2 cup peach jam
Whipped topping
Drain peaches. In saucepan, heat brown sugar and butter on medium-low heat until melted. Add water and continue to cook until sauce is thick and foamy. Pour into baking dish (9x13), cool 10 minutes. Place sliced peaches on top of sauce. In a medium bowl, mix cream cheese and jam together. Spread cream cheese mixture over 9 slices of bread, and top with remaining 9 slices, making cream cheese sandwiches. Cover peaches with bread slices placed close together. Blend eggs, milk, cinnamon and vanilla and pour over bread. Cover pan and refrigerate overnight. Bake in a 350 degree oven for 40 minutes, or until top is golden brown and toast is cooked all the way through. Serve with whipped topping, if desired.
Sometimes my French bread cuts into slices that are so large that I can only fit six sandwiches in my 9x13 pan. So just try to cut your bread into equal sized slices that will use up your entire loaf and still fit into a 9x13 pan.
If you think your toast isn't all the way cooked yet, but the top is starting to brown, cover the pan with foil for the remainder of the cooking time.
You can also prepare the entire dish early in the day, only do not pour your egg mixture over. Save the egg mixture in a separate container, and then stir and pour it over your toast just before bedtime. This worked very well for us because we had a Christmas Eve party to go to, so I made everything in the morning, went to the party, and then came home, poured my eggs and went to bed. It was so easy!
