Marsha's/Taste of Home's Baked Oatmeal

*When I went to a nutrition class for being pre-diabetic, I was told that oatmeal is a "healthy carb" and the one exception I was allowed when pursuing a low-carb diet. So, that is why I have marked these as "low-carb."


When I saw this recipe for baked oatmeal, my curiosity was peaked and I had to give it a try.  It was FANTASTIC!  In the end, it was almost like eating a cake.  Slightly warmed with a dollop of whipped topping, this is so good, I have been eating it for dessert!

Changed up from the original recipe found here on the Taste of Home website, this is my much smaller and cinnamon-y version.  Enjoy!

Marsha's Baked Oatmeal

Ingredients

  • 3 cups quick-cooking oats
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 eggs, lightly beaten
  • Cinnamon Sugar
  • Whipped Topping

Directions

  • In a large bowl, combine the first eight ingredients. Pour into a greased 8-in. x 8-in. baking dish. Sprinkle with cinnamon sugar.  Bake, uncovered, at 350° for 25-30 minutes or until set. Serve warm with whipped topping.
