Marsha's Slow Cooker Sweet Pork For Burritos


My husband absolutely LOVES sweet pork, so I had to find a recipe to make it at home from time to time. He LOVES this recipe so much and requests it often. This recipe does marinade overnight.

Marsha's Sweet Pork
2 pounds pork (boneless pork ribs)
3 cans regular Coke
1/4 cup brown sugar
dash garlic salt
1/4 cup water
1 can sliced green chilies
3/4 can red enchilada sauce
1 cup brown sugar

Put the pork in a heavy duty ziploc bag to marinade. Add about a can and a half of Coke and 1/4 cup brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 a can of Coke, water, and garlic salt in a slow cooker on high for 3-4 hours or until pork shreds easily. Remove from pot, discard liquid and shred.

In a blender, mix 1/2 a can of Coke, chilies, enchilada sauce and 1 cup brown sugar until smooth. Adjust the amount of sugar and liquid to taste and thickness.

Put the shredded pork and the blender sauce all back into the slow cooker and cook on low for 2 hours. This can be a bit wet in the end, so if you don't want the juices running out of your burrito, be sure to drain the pork you are putting in your burrito thoroughly.
