Double-Fudge Brownies

For William's birthday, he went through my cookbooks and picked some recipes for us to try. One recipe was for double-fudge brownies, and they were excellent!



Double-Fudge Brownies

Ingredients:

  • 1 cup (135 g) flour, sifted
  • 1/2 cup (60 g) unsweetened dark cocoa powder, sifted
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups (400 g) granulated sugar
  • 1 cup/2 sticks butter, melted and cooled
  • 2 tsp vanilla
  • 4 eggs (room temperature)
  • 1 cup (180 g) semisweet chocolate chips

Directions:

  1. Preheat oven to 325 degrees. Grease a 9x13 pan with nonstick spray, then line with parchment paper, leaving overhang on the sides.
  2. In a small bowl, sift and whisk together flour, cocoa, baking powder, and salt.
  3. In a large mixing bowl, beat together sugar, melted butter, and vanilla until creamy. 
  4. Then add eggs one at a time until fully incorporated.
  5. Add flour mixture a third at a time, mixing until just incorporated.
  6. Fold in chocolate chips.
  7. Pour batter into prepared pan, spreading out evenly.
  8. Bake for 25-30 minutes, or until tester inserted into the center comes out slightly wet with a few moist crumbs.
  9. Let cool completely in pan set on wire rack before removing from pan and cutting.
