Easy Breakfast Casserole Bake/Burritos

Ingredients:

  • Frozen hashbrown patties
  • Egg Beaters or whipped eggs
  • Toppings (shredded cheese, crumbled meat, finely chopped veggies)
  • Desired seasonings.

Directions:

  1. Preheat your oven to 350 degrees.
  2. Spray your baking dish with non-stick spray.
  3. Line the bottom of your dish with enough hashbrown patties to cover the bottom.
  4. If not using egg beaters, whip up as many eggs as you think you will need to cover your hashbrowns completely. 
  5. You can either sprinkle your desired toppings and seasonings on top of your egg mixture, or you can stir everything together before pouring it over the hashbrowns.
  6. Bake until eggs are completely set. This takes anywhere from 30-60 minutes depending on if your hashbrowns are frozen and how big of a batch you are making.
  7. Serve as a casserole, or wrap each hashbrown patty portion in a tortilla for a breakfast burrito.

Marsha's Notes:

It doesn't get much easier than premade hashbrown patties, egg beaters, and shredded cheese... but if you want to get fancier, you can add bacon or sausage crumbles, finely chopped veggies, seasonings or whatever else you would like to the egg mixture.

You can make this recipe as a single-serving situation, or make a larger pan to feed a family or for meal prep.
